In CEA, there are not only updated graphics, but terminals scattered throughout the game that give you a bit of insight to 343 Guilty Spark, more achievements for your Waypoint, free access to the Anniversary DLC (if you buy it new lol) and the ability to switch between old and new graphics. It's like CE, but better. Yeah, the multiplayer is just Reach's Anniversary DLC, but CE didn't have online multiplayer on the console anyway xD

Are you asking how the projectiles are made? The weapons create a miniature containment field around each separate "bolt" of plasma before using a magnetic charge to hurl the plasma towards it's target. The containment field holding the plasma bolt itself has a minor magnetic charge to it, which is what allows it to be hurled in such a manner. This is also one of the reasons why plasma bolts are great against shields. The containment field surrounding each bolt of plasma is weak (only strong enough to keep the plasma going), which is why the ball of ionized gas "pops" on impact.

I've actually tried that, and it doesn't work unfortunately. :/

That requires a rather complex answer, so if I lose you I apologize. Anything is possible means that anything can be done eventually. Impossible means that it cannot be done now. So, yes, both are correct because at any given moment in time there are things that cannot yet be done but can be done eventually, when the correct amount of circumstances are able to be met. A for instance of this phenomena would be that it is impossible to fly by flapping your arms, however if humanity were to evolve in a way that gave them flight properties at a later date in the future, then it would become possible. Something is impossible up to the point it becomes possible. Impossible doesn't necessarily mean that it can never be done, simply that it cannot be done at the present.
